Cancer-fighting tomatoes

Tomatoes are getting their first reward. After examining certain nationalities for incidence of cancer, researchers found that Italians, who eat more tomatoes on average than any other group, have lower rates of cancer. Tomatoes are rich in the carotenoid lycopene, a plant nutrient also found in watermelon and grapefruit. it is an oil-soluble nutrient with powerful anticancer and prostate-protective properties. The lycopene found in tomatoes is better absorbed when the tomatoes are eaten with oil. Pour a little extra virgin olive oil or flaxseed oil on your tomato salad, or add these oils to your tomato sauce just before you serve it, and you will absorb up to 70 percent of the lycopene.
